Field Notes: Food Machinery Components
Food machinery components are specified on cleanability first and everything else second, and that order of priorities eliminates whole categories of detail. Square internal corners are out, because a square corner cannot be cleaned. Spot welded joints are out on any product contact surface, because a spot weld leaves a gap between two layers of sheet that no brush reaches. Exposed fasteners are out where product can collect around them. What is left is a component with radiused inside corners, fully fused welds, and surfaces that drain. Stainless is the usual material, and the finish is chosen for cleaning rather than for appearance – a surface that can be scrubbed and passivated is more useful here than one that is mirror polished, and it costs less.
